How does the Guinness widget create the creamy foam in the can?
The Guinness widget is a ping pong ball with a hole in it placed inside the can before sealing. Just before the lid closes, one drop of liquid nitrogen is added and the lid is sealed. When the can is opened, the pressure drops and beer rushes out through the tiny orifice in the widget, nucleating bubbles inside the can and creating the signature creamy foam when poured.
